When I eat those I like to imagine they've been painstakingly and individually polished to perfection in some third world sweatshop using polar bear fur. 'Merica!

Lye. It's what makes them so shiny, and why there are so few recipes for homemade hard pretzels.

According to intrepid baker Rose Levy Berenbaum, the batterie de cuisine for making homemade pretzel rolls--football-shaped, for Super Bowl parties--calls for Red Devil lye, tongs, and super-protective gloves and eyewear.

This is why I'll make soft chewy pretzels at home, if I want to (no lye required!), and leave the hard shiny numbers to Utz, Rold Gold, and others.
